Buck’s Bar Opening in St Andrews, Owner Confirms

Famous Scottish eatery, Buck’s Bar, is set to open a new location in St Andrews this August, taking over the former Ziggy’s at 6 Murray Place.


In an exclusive interview with The Saint, founder Michael Bergson confirmed the business expansion, which will be the brand’s sixth venue and first outside of Scotland’s central belt. Work is scheduled to begin next week, with plans to open to the public before the start of the new academic year.


“I’ve been searching for a venue in St Andrews for some time,” Bergson said. “We’re really popular with students, locals, and tourists, which ticks a lot of boxes. I used to visit often as a child with my family and have many fond memories. When I was told about Ziggy’s becoming available, I jumped at the chance to take it on.”


Founded in Glasgow, Buck’s Bar is known for its “truly exceptional fried chicken” and American-style comfort food, Bergson said. He shared that the concept behind the food chain was inspired by his travels in the United States.


“I've always loved travelling across America, and I love Rock 'n' Roll music. I had an idea for an American-style bar with good-time rock 'n' roll, beer, and bourbon. I always wondered why you couldn't get top-quality wings, fried chicken, and dishes like chicken and waffles or Nashville Hot Chicken in Scotland. Trying Nashville Hot chicken was the lightbulb moment — and Buck's was born.”



While the food is key to the brand’s appeal, Bergson believes it’s also the personality of the establishment that sets Buck’s Bar apart: “We try to recreate the type of atmosphere you find in a New York dive bar or the honky-tonk bars in Nashville,” he said. “We’re more Little Richard than Metallica — it’s rock music but family-friendly.”


The St Andrews venue will follow the same format, offering a familiar menu, music, and deals — with its own identity. “Every Buck’s has its own unique design features,” Bergson said, “but the feel and the food will stay the same.”


He added that St Andrews guests can expect the signature Buck’s experience: “We pride ourselves on treating everyone as VIPs, no matter what, so they can expect a warm welcome. A huge percentage of our customer base are regulars.”


Buck’s Bar’s popularity among students has been key to its success in Glasgow and Edinburgh — and Bergson says that St Andrews fits the eatery’s core demographic perfectly. “Our first two venues were in areas with lots of students, so we’re already student-friendly. We’re known for big portions, good value, and drinks deals all week.”


The owner confirmed that several of the brand’s signature offers will apply in St Andrews: “We have 40 per cent off all cocktails Monday to Wednesday, drinks at £3 every day, draught beer from £4.50, and an express lunch for £13.95. These deals are available to everyone — students and locals alike.”


Bergson added that affordability remains a key priority: “We recognise that money is tight for many just now, so we need to keep offering amazing value. I just get excited about seeing a room full of happy guests.”


“Lockdown was tough, but it's even tougher for hospitality now, with costs rocketing like never before,” he said. “Our strategy has always been to keep going.” 


Although no further openings are planned for 2025, Bergson said the establishment is hoping to expand further in 2026.


When asked about the chain’s forthcoming arrival in St Andrews, Bergson shared his enthusiasm: “[We are] super excited. We feel privileged to be coming to such a special place. Also, we’re dog friendly!”
